Good for you for thinking about all this ahead of time.
You'd be pushing the limits of your truck but it's doable.
For calculation purposes, negate what your payload sticker states and get your truck weighed with a full tank of fuel. Subtract the scale weight from your GVW and that's your real, workable payload. As you did in the calculator, keep subtracting people, cargo and gear in the truck to give you your remaining allowable tongue weight. You're on the right track.
As far as the trailer goes, I'm not sure I'd trust the manufacturer's claimed tongue weight. This can easily vary trailer to trailer. And, once you add a couple batteries and propane tanks to the nose, plus gear, you're probably looking at a tongue weight in the 1000-1100 range. (Example: Mine was claimed to be 581 and ended up right at 800)

The actual weight of the trailer as completed at factory on the sticker of the one I'd purchase with full propane tanks is 7140 lbs.
CCC for the trailer with this weight is 2110. GVWR 9250.
It's a Jayco 29BHDB.
I hear you on the tongue weight and I won't know exact unless I weigh it after purchase. In the calculation I provided, I added 200 lbs for "Traveling Comforts" I don't think I'm anywhere close to that, but wanted to be conservative.

Those numbers are BS.
Tongue weight needs to be 10 - 15% for proper vehicle control, ideally around 13%.
825 is 8.9%.
If in fact your loaded trailer weighs 9,250 pounds, then your planned tongue weight should be 1,202. Note that you'll both need a weight distribution hitch, and if trully 1,202 you'll be over the printed capacity of your hitch (lay down and look up at it).
I would insist on a tongue weight BEFORE purchase.
And you need to do proper WDH adjustment, weighing on a CAT scale, before trailering.

I don't travel heavy (no water, no waste) and if you look at the floor plan linked above, not a lot of storage to begin with, so knowing what I already pack in our currently trailer, no way I'll ever max out to 9250.
Anyway, I agree the tongue weight number is BS as it doesn't even include propane tanks & battery.
Like I said at the top, I think I'm close to max, but within the limits.

An interesting note....
Any trailer made by Keystone is actually weighed at the exit door of the factory and the weight label is printed...stuck on.
Not sure about any other manufacturers though......

Jayco does the same, the yellow sticker you'll find on the trailer states the actual as equipped weight with full LP tanks. The weight I referenced above is right off that sticker.

Ours is a similar layout to the referenced Jayco bunkhouse. Fully loaded with all of our gear, kids toys, cooking supplies, food, lawn chairs, and about 5 gallons of fresh water for flushing the toilet, the trailer weighed in at 7080. That still leaves us with a 500 pound buffer in the trailer.
That Jay Flight is a nice floor plan. If you can squeak by with only one bathroom, there may be lighter weight options out there.

We could squeak by with "only" one bathroom, but the other option we like 28BHBE saves about 430 pounds on the as equipped sticker weight yet tongue weight only saves about 100 pounds dry.
