Going to full synthetic question.
How many miles should I put on me new Ford F150 ecoboost before switching over to Mobil 1 full Synthetic. It's a 2001 with 1k miles right now.

I swapped at 5k. I think you'll be fine to do it anytime. Its not going to hurt anything, they do not use any "break in" oil.
What I do..
2k on original oil, changed to the recommended motorcraft semi syn oil. At 5k I dropped that and put in amsoil. Mainly as I knew some trash was still in that oil from assembly and casting.

At first oil change at about 1k miles. Anyone who tells you you should wait doesn't know what he's talking about.
Just picked up a new VW Jetta GLI turbo for the wife and it came with full synthetic. Now THAT is a fun car!!

At 5K, I put a case of Mobile One 5W-30 in the passenger floor board and told the dealer to use that. No problem, they used the correct weight and amount without me having to check up on them.

Anyone who says you should change oil at 1K miles "doesn't know what he's talking about". I won't say you should wait, but you could wait. There is not a thing wrong with waiting longer than 1k miles (which is, in my opinion, an extreme overkill interval). You could wait even all the way up until the manufacturer recommended interval. I'm pretty sure the engine designers/testers know what they are talking about... You won't damage a thing.
...Or you could change the oil at 1000 miles and every 1000 miles thereafter if you wish. It is your paycheck you are spending and nothing wrong with changing oil at an extreme overkill interval either. Spend money just as frivolously as you like, it'll help stimulate the economy after all .
