I got a new phone so I have my old Galaxy S 2 and the Torque app as a permanent gauge in my truck now which is similar to this. I am still trying to figure how to route the USB cable I have hooked up to the truck's 2nd USB in the dash for power. I have the Torque app configured to where it will put the phone to sleep if it does not get any feedback from the OBDLink after a while to save the battery. Only thing that really cost a lot was the OBDLink itself. You can get a cheap one like a friend did but they are very slow. The almost instantaneous readout on the torque app was worth what I paid for the OBDLink.
Here is my usual gauge set up that I have it on out of the three I made. You can make up to 15 different gauge screens like this of different set ups that you can flip through with the swipe of your finger as you are driving.

Your EGT's... When you hit 1409(IIRC), were you climbing a hill?
Do you have a programmer running 'tunes' on your truck?

Those are cat temps which are roughly 400-500 degrees hotter than EGTs from what I have read and have been told. Normal operating temps for cats are between 1200F and 1600F. If you get to 2000F, then you will start to run into problems and ruining your cat's internals. That pic that I posted was normal driving from my company truck which does not have a tune. My personal truck that has a tune runs a little hotter under load but not by very much. I have tried to get my personal truck with my 5 Star 87 perf/tow tune as hot as I could without breaking anything and the hottest I reached was 1665F. I did the same with my untuned company truck and the hottest I got that one was 1636F. My Superchips 87 tune would easily get to 1795F with just a WOT sprint with the boost getting as high as 20.5 psi. That is one of the main reasons I took it out and went with the 5 Star. One of these I will try running the SCT 87 tune and see how hot that one gets.

I have a serious case of CRS, but I don't remember the 'Ohhhhh SH*T-AHhh line being 2,000 degrees. I thought you wanted to think about lifting at 1500 or so. I definitely could be wrong, but it would be the same between the two, as they both use the same metals in the exhaust, so the melting point would be the same..
Lemme ask you this...when you got up to almost 1800(?)...did your floor pan get hot?
Last one..the ECU takes it's EGT reading(s) in the Cats? They're EASILY 200 degrees hotter I would think. Prolly just better off plumbing in a mechanical sensor. I just hate introducing metal shavings up-stream of a turbo. Despite being 'Sure' you got all of 'em out, you still sweat bullets for a week or so afterwards.

Anybody with an SCT tuner can get the software from SCT to show the same thing on a lap-top, ipad, and IIRC even your cell phone now.
If you're wanting to just keep an eye on the 'normal' functions(EGT, boost, oil press/temp, coolant temp, eng/trans temp-more accurately than the OE guages), there's a boat load of gauges or even screen-type displays from the likes of Bully-Dog, Banks, SCT, Edge, Diablo Sport(IIRC) etc. A lot of these even record acceleration G's, and 0-60(or more) and 1/4-mile times.
The modern ECU monitors damn-near EVERYTHING now days... engine temp, boost, spark adv, intake temp, oil press..
I downloaded the data-logging software from SCT to data-log my Boss 302 for a tuner, and you'd me amazed at the finite powertrain data your ECU keeps track of. All that's needed to tap into it is an OBD(2) connection.
