Does the truck have the max-tow pkg? If not, I believe, you are towing more than that truck is rated for. The max tow does come with a bigger radiator too I think.
245 isn't that hot these days. If it was really overheating I think it would've gone into protection mode. I've towed some heavy loads ( 9-10k) up steep hills (9-mile hill, west of Albuquerque) in the heat, at 70mph and never even seen my temps rise. I agree with just about everyone else, just leave it in drive, turn on tow/haul, and since your only going 55 maybe lock out 6th. Let it do its thing. You don't have to downshift like it's a 4L60 or 80.

You are overreacting. My diesel, which has a cooling system from hell on it, would go from 190* to 220* by going WOT for to long unloaded due to the high egt's. The fact that you are pulling nearly 11,000lbs up a 3% grade that is 10 miles long and it only went up 30* is impressive to me. 245* is not hot at all. Hell, dads corvette, which is aluminum block and heads, factory runs at 220* and the fans don't come on until 245*. If anything is gonna warp it'll be that. Not something that's all cast iron.

Eco is all aluminum not cast iron.
