It was because I used OpenCore to install Big Sur on a system that should not support it. I fixed it by installing the OpenCore Patcher. It boots fine now.
Prior to upgrading to Big Sur, I cloned the original HDD to a Western Digital SSD... I used my Wavlink cloner, and it worked like a charm. Booted right up like nothing changed.

Surprised Acronis still worked after a quick update cloning the older SSD's. Finally found a use for those Samsungs (840 and 850 EVO's) in the arsenal.

Do you still have to Zap the Pram on those Macs when they get all wonky? It use to be a thing.

I did reset the NVRAM / PRAM, but in hindsight, I'm not sure that was necessary. It was a hail mary attempt to get it to recognize the changes I made.
LOL, it's probably cheaper than a toaster nowadays.

I've thought about putting Linux on my iMac but, they are from 2007 and 2013. Plus we wanted laptops so that we can enjoy the deck at our new place. These things are usually booted up in less than 30 seconds. My iMacs it was getting to be about 3 minutes to boot. Maybe could have been 5 minutes. I just know it got to be at the point that I'd turn it on when I got up before I hit the bathroom and it may have booted up by then. Funny thing is, this was the 2013. The 2007 was under a minute. I think the last OS I could officially install on the 2013 couldn't handle the additional work load at start up but, was mostly fine once up. Although the conspiracy theorist in me says Apple made it slower to force an upgrade. Which they did get caught doing on their iPhones.
Since I put Big Sur on it via OpenCore, it wants to update to Sequoia. I read that is not the greatest idea because it is hit and miss on the GPU being supported. I am running Linux Mint on a little i3 NUC that's hooked to my 55" Samsung. My daughter asked me this morning if I have anything with Linux on it that she can use. So I'm guessing that will come up missing soon, lol. I may put it on a thumb drive and let her use my old laptop to see how it runs. It's an i5 with 16GB of ram, so it should run better than Win 10 on it.
Brew, a guy at work gave me some MAC parts, so I'm going to try and resurrect the mini again. Hell... that is a candidate for a Linux box too. Didn't that have an i5 or i7?

Friend of mine did put Linux Mint on his Mini so it is doable.
I'm running OpenSuse Tumbleweed on our laptops because, it was the first one I tried that didn't hang on install boot up (didn't even get to were I could select options) due to the nvidia graphics card. Only have one issue that I'd like to figure out but, it is mostly an annoyance.
