So about aftermarket wheels...
Finally got a job where I will have a nice bit of $ each month to save/invest in my truck. First thoughts are rims/tires. I have a "2004"( really a leftover 2003) super cab with a 4.2 and 2wd. From what I can see at the stock height everyone says 265/70r16's if I remember right. It's that the largest size that won't tear up my super weak highway cruiser rear end? 2 of my 4 OEM rims are to banged up to actually balance, new rims are a must/want. I am new to buying aftermarket rims and am lost in offset. I found a nice set of 16" 5x135 rims but they are offset:10. This means the wheels would be more under the fenders? I don't want my tires sticking out really far but I would like a beefier stance for my truck so any input/experience would be appreciated.

The offset of the wheel is just how far the center of the wheel is from where the wheel bolts to the hub. Positive means it is close / under the truck, and negative means it's further / out of the truck. A +10 offset means that the center of the wheel is 10mm from the center of the hub. A 0 offset does not mean it will be at the fender. For example, you can have a 16x8 wheel with a 0 offset, or a 16x12 wheel with a 0 offset. That's 2" different on both sides.

So if i wanted to get some 16 x 8 wheels. What amount of negative offset would I be looking for to get like 1/4" of tire outside of the fender? Is that like -6 or more like some of the -25mm I see?
