Default Real time water temp gauge help

So to go with my Efan install this summer I'm adding a water temp gauge, electric or mechanical not sure yet. With a single pillar pod on another pillar cover from the junk yard that I'll bond to it and ptm. My problem comes with the sending unit or probe for the gauge. I've looked for hours and still unsure. Where should I mount the probe to get the most accurate temp reading?? I've read there's a tube somewhere near the intake manifold, or near the thermostat. OR could I just use the plug on the side of the block if I get an electric gauge? Will that be accurate?

Here's my engine, 2000 5.4

Seriously I've looked so long I could tell you where to put the trans temp, or vacuum or water temp on a 4.2 but not mine

I would just drill ans tap the aluminum crossover and use a electric gauge. To be honest a Edge Insight is a great way to monitor temps with out having to program the truck because the PCM monitors ECT constantly.
