Whats smoking the heater core? Are ya losing coolant? Do you have access to a pressure tester? If so pressure test the cooling system to find if you have a leak. If you think its your heater core, try by-passing it and see if you still have the problem. The drain for the heater core might be right above the exhaust and that is why its smoking. There are all kind of hoses and connections on the back of your intake. Look VERY carefully.

For some reason when I am driving, every now and then, what looks like white smoke comes into the truck cab via the AC vents and it smells like coolant any reason to this
and also Is there a way to tell if your head gaskets are messed up with out taking the engine apart

If you're into doing your own work or just better understanding your vehicle, highly suggest getting a manual - Chilton's or Haynes or the like. Tough to find specific instructions online for your given model.
I've replaced my heater core at least twice - I would highly recommend getting the higher dollar core (about $60 for my vintage) - tried the AutoZone cheapies (about $27) - it appears that about 1/3 of the core is blanked off which results in less heat for the cab along with lower airflow, which more importantly affects the defrost capabilities.
Not only does a leaking heater core potentially leave a puddle in the cab, put out a sickly sweet smell, and put out a fog through the vents - this fog coats everything which makes for tough to see conditions in humid weather - it coats the glass.
