Default 01 F150 high idle, no temp gauge

So I just bought a 2001 F150 with a 4.2 v6. I’m having a couple issues. The first issue is that the temp gauge is not working. The second is that when I start it up it idles up real high and then slowly comes down to normal. If I turn on AC it idles up like this every 20-30 seconds while sitting at light or parked. Any ideas?

IAC = idle air control... probably look into that
If your gauge doesn't work check fuses, check wiring, check the gauge itself, check the sender

is it possible it’s the cylinder head temp sensor?

And I have now discovered after a closer look that the old one is broken off flush with the cylinder head, drivers side rear. Any tips or tricks for getting this out?
