What should I do?
Im taking my truck into the dealership to have the plugs done tomorrow morning.
I have an edge evo (set on level two and programmed for the 35" inch tires im running) installed in the truck.
Should I take it out and set it back to factory settings? (Ive heard all kinds of things about the dealership re-flashing PCMs and so on...)
Whats your advice?

It's not advice, but I plan to return mine to stock settings whenever taking it to a dealer ...
... they love to reflash.

If it's out of warrantee (I assume it is if it's time for new plugs), and all they are doing is changing plugs, I'd tell the service advisor that you have a custom tune installed, and you don't want the truck flashed by them. No reason for the dealership to re-flash if they are only going to change plugs.
