I doubt you are off that much with the rpms. On those lovely -20 days, mine will sit and idle in that range sometimes close to 5 minutes. Talk about fuel consumption.
As for your exhaust, you need a muffler. Kind of surprised a shop would do an install without one. Youtube is your friend for sound clips of different setups. I run a MBRP Xp series SI/SO catback. To me, it's the best sounding system I have ever had on a truck. But, it is still loud enough that your neighbors will hear it at start-up. Good thing is that I get along with them, and they don't care.

Yea I will look into that in mn technically cats are mufflers so it's legal long as there isn't a noise ordinance enforced. I park my truck in the garage so quieter but still loud will be muffled my my garage. Wonder if I can get a mbpr muffler and leave the rest of my system

Is it the length of the muffler that determines how loud it is going to be?

That's one element, but a small one. The muffler itself and what it makes the exhaust gases (and sounds) go through is what determines volume. Flowmaster mufflers have a number of hard chambers that the sounds go through that muffles the sound and gives it a distinct raspy sound. Magnaflow uses softer materials that absorb more sound and give it a deeper more grumble sound.

Even within those brands there's different sizes and models that muffle the sound even more. Generally speaking, the bigger the muffler the more it muffles the sound. So it becomes an exercise in taste. What do you wasn't it to sound like and how loud do you want it. Taste is like belly buttons - everyone has one and they are each different. There's no right or wrong answer (unless of course you remove everything and it ends up being too loud). You can listen to video clips on the internet to get an idea, but nothing will come close to picking one, having it installed, and running it for a few weeks.

Oh, and you shouldn't remove the cats. That's bad juju.

Mine is definitely loud upon cold start even with a muffler...then again I had the stock cats swapped with magnaflow high-flows.
I feel like I wake up my entire neighborhood when I start my truck at 6:30 in the morning...sometimes 5:45.
