My edge says 195F ECT when my truck is warmed up and it's -25 degrees C. So that's about -15F

Does your truck take a long time to warm up? Your thermostat might be stuck open

Driving short distances does not let the engine warm up enough to boil the condensation out of the crankcase. It also doesn't let your exhaust get hot enough to do the same. This results in rusted out mufflers, cats, and pipes. A twenty to thirty minute drive is pretty much the minimum to thoroughly warm up your vehicle.

Well I start my truck about 7am every morning and shut it off around 7:25 when I get to work.

when warmed up My truck runs at 193, no matter what the temp outside.

Your always going to have condensation in the crank case. Its a product of an engine block cooling down and moist air being trapped in the crank case then condensing. , take a sharpie and mark the coolant level while warm, then I would take a nice long drive and drain the oil, if the oil isnt milky/cloudy, and the coolant doesnt drain down, you should be alright. Short distances and increased cold starts/stops will kill your engine much quicker than running it 40 miles on the highway every day. You really shouldn't put a load on a cold engine, a warm engine is a happy engine. Thats the way they were designed to operate.

1st a head gasket doesnt start to go either they leak or they dont. 2nd as stated above short trips in cold weather does not allow the engine to vent off moisture and as a general rule this will collect in the upper and cooler parts of the engine [valve covers and especialy around the oil cap. 3rd the actual temp of the engine [the warmer the better] does not influince the evaperation as much as the length of time the the engine is run [longer is better] so if your not loseing coolant fire that puppy up and take a trip. moister in the crankcase is the #1 producer of sludge so more frequent oil changes might be in order but the best thing you can do is just drive it. one last thing make sure your PCV system is not partialy or wholey pluged.
