Default Catalytic Converter Issue

I've been having issues with the cat converters, it seems they are clogged or broken and are making a rattling noise when i hit the gas. I noticed there is an O2 sensor before the cat converter and one Inside the cat converter. If i chose to completely remove the converters how can i trick the sensors so it doesnt throw an annoying code?

It's probably just the heat shield rattling, not the converter.

I thought so however i also have a serious loss of power when accelerating for example up a hill.
