Now I'm seeing that the 315/70R17 tires are asking for a 8.5 inch rim. Is that just recommended or will they still fit on the stock 7.5 inch rims?

I don't think you are supposed to run the tires on less then the 8.5 width rims. It will definately make them wear bad, and (not sure on this) it may cause the bead not to seal correctly around the rims, which would be bad if they came unsealed while moving.

Ok then I think i'll back it down to 295/70R17's which is about a 33inch tire that should go on the 7.5 inch rim ok

I went with 295/70R17 Terra Grapplers on the stock rims

Good decision. I had the BFG's and honestly, they shook my teeth out while braking. Figured it was my rotors, changed all 4 and no change. Re-balanced my BFG's and no change. Replaced them with Yokohama Geolander ATS and all was cured.

had a nice broken spring on the passenger side...
