Will cab height increase with a level?
I use a parking garage at work that is fairly short, I don't have much room as it is. My question is, will the Bilstein 5100s raise the cab height (at roof) at all? I am leaning towards .75 or 1.5 setting. I am thinking not since it is naturally raked to the front, right? Or am I absolutely wrong.

Maximum cab height won't change with just the level. I did the Bilsteins set on the next to highest setting, and with just the front level there was no difference.
But then I installed the Supersprings AAL so I wouldn't be nose high towing or hauling and they actually raised the rear a little even when set on the non-preload setting.
You also have to consider your tires though. Are you going to larger tires with the level? If so you'll get another 1 to 2 inches of height there.
I think the stock size with a level looks odd.

Right. The back edge of the cab is the highest point and it doesn't change with just the front level.

I am going to have to disagree. the pivot point of the vehicle when you install a leveling kit is the rear axle. The only area that wouldn't raise in height would be whatever area is directly above the rear axles. In this case, there is no issue because there is the bed of the truck and that is much lower than the cab (obviously). Anything farther forward of the pivot point is going to increase in height. So yes, the cab will increase in height. I don't need to look at anyone's "measurements' to understand this. It's common sense.
