Default Wheel/Tire question

A little background: I have a 2011 FX2 with a 2.5" ReadyLift in the front and the 4x4 rear blocks (1.25" I believe).

I've been looking to get new tires and wheels. I keep debating whether to just stay with my stock 20" FX rims or get some new 18" rims. I think I'm leaning towards 18". I will be getting Toyo AT2s.

So today I went to 4 wheel parts and was told the largest tire I could fit is 285/65/R18 which doesn't even measure 33"...from all the reading on the forum, I thought I would be able to run up to 34" tall and 12" wide.

My question is, would 295/70/R18 fit? Or am I really stuck with either the 285/65/R18 or the 275/70/R18?

You can run 35x12.5 on a level hell this has been shot to death and back everyday on here.
