You're on exactly the right track. EcoBoost with 3.73 axle and max tow package will put you in that 11,300-lb range. I couldn't find the 2012 Ford Towing and Trailering Guide, but follow this link for the 2011 guide. Helps clear up the confusion and takes the salesmen silliness out of the picture.

Not too many F-150s at the rodeo parking lot, from what I've seen...

The reason that I'm looking at a 150 EB is because this is going to be the only vehicle for the wife and I, and when she's not towing it once a month to horse shows, its my daily driver on secondary roads in Northern NH where I drive ~30 miles one way to work. so the gas mileage of the EB was a big factor in picking what type of truck we were going with. Upon further discussion with the wife, we've decided that we can get away with having a 2 horse trailer which will cut down on a good amount of weight, and hopefully not be too much trouble for the EB 150 to tow

Even tho I think you were ok before you are totally fine w a 2 horse trailer. You will love the EB and if your easy on the throttle you will ove it even more. Enjoy your new rig.
