Exact same one I have and that's why I recommended buying one that costs about $30 bucks. I recommended it because I knew the cheaper stuff won't do what you need it to

Will I be able to look at the parameters with the app on my phone? Like can I see what my tire size is currently set as, or just look at real time fuel usage data etc etc?

That would depend on the app.

Do you feel better, now? That's all you'll get out of it, so I hope so.

I had 20" rims with P275/65 R20 tires. That was an option from the factory bumping the list price up $75. I wanted to go back to LT 275/65 R18 wheels and tires. Cost of tires is less. The spare is also a 275/65 R18. I wanted them all the same.
I had the dealer correct the TCM to reflect the change for more accurate mileage, speedo, etc. The dealers program is on a laptop and is a menu driven program.

Go with the Forscan app make sure the tiresize in the TCM matches the tires on your truck.
