Back on track. I have a 2014 Eco-Screw Fx4 with an ARE Z-Series Cap. I get crap mpg's. If I creep past 75mph I get less than 15mpg. Now, I drive a giant wind catcher with that cap but I need it so I just deal with it at the pump.
With My Goodyear AT/S tires at 45 pounds and babying it I can go 16.5-17 in town but I am really easy on it. If I keep it 55-60 I can get up near 20 but the 20mpg days were bye bye as soon as the cap went on.
Sounds like your truck is doing just fine.

Yeah! that 36 gallon tank fill is a shocker the first time you fill the tank from half or a quarter tank, like I did the second week I had it. Gas in my neck of the woods was around $2.70 ish a gallon at the time.

I get dead on 13mpgs.
But if you want something justify getting a tune, then just lie to yourself and say it will help. You will enjoy the time for more than just mpg's.

I get 17.6 mpg driving mostly on local roads, no highway. Drive it more like a grandmother, slow down when coming up to red lights, and try to keep your momentum up. It's the acceleration from a stop that kills the mpgs. That and driving to fast on the highway and head winds

I have had my 2013 STX 4x4 Supercab with the 5.0 since new, and it has been brought to my attention that my mileage should be better than it is.
I'll start off with my data. This is all with no trailer and no tonneau cover, and totally stock setup. 5K mile oil changes with Valvoline full synthetic.
Initially when I first purchased the truck, I got 19-20 on the highway and usually 17+ in a combination of highway/stop and go. Once it got broken in( a few thousand miles I'd say), the mileage dropped moderately and I didn't think much of it, although I always thought that efficiency should improve after break-in.
Now, I get anywhere from 13 to 18. At 80 mph on flat flat interstate, I get no more than 15. If I drive 60 with a tailwind, I can occasionally get close to 20 if I drive like a grandma.
Now my question to what I should do about it. Is there something the dealer would be able to do by updating the software? If I got a tuner, would that help, or possibly do the same thing as the dealer could do? Or do these numbers actually seem consistent with everyone else? I'd like to see close to 17 at 80 mph with no wind. Or am I asking too much?

Things that I've found make a huge difference:
As mentioned above, winter fuel takes out a couple/few mpg.
Tire pressure - couple psi low (like because the temperature dropped 30° since you aired up) can take a couple mpg.
Wind and/or speed - I used to do the same 270 mile commute once a week. A headwind vs tailwind has made as much as a 5mpg difference for me. If you were driving before in calm conditions and now it's winter and the wind is howling that'd do it. Same with speed. 60-65 gives me best mpg. It drops 1-2mpg at 70, again at 75 and even more at 80. I've gotten as good as 23 at 60mph, and as low as 13 at 80mph.
Keep your foot out of it - aggressive application of throttle makes a difference. Maybe you were babying it when you first got it??

I mostly drive city and I average 12.5 - 13 mpgs.
Once or twice a month I take long trips to our camp from south to central Florida - all highway and I'll get 17-18 mpg at 70-73 mpg using cruise. All Florida roads so very few hills and those are mostly bridges.
I'm an average driver, drive normal, somethings I get on it but mostly not.
It's a 14 FX4 completely stock with 16,000 miles.
Love the truck but its certainly worse on mpgs then my 11 FX2.
It IS heavier however and longer. FX2 was an extended cab with a 6 1/2' bed. FX4 is a crew cab with a 6 1/2' bed.
I'd love to complain about it but... It isn't fair...its heavier... Period.
I will be putting a 4" lift on it within the next 6 months, adding a dual exhaust an tuner and 34-35s. Just saving the $ to get there. There goes the mpgs for sure but you gotta pay to play...you only live once.
Bottom line is, these trucks are bricks on the road. Wind is a huge factor but winter blends, hills, your right foot are also major players in the mpgs. Of course, I'm talking OEM. Throw in upgrades and all bets are off.
These threads prove that 5.0's and EB's can vary with ridiculous mpgs in both directions.
Unless the poor mpgs are a financial burden, just enjoy the truck. It's really that simple. Enjoy it.
