Basically you've discovered that the more miles of travel that you are averaging, the slower that average will change. If it's been 10k miles since you reset the average, it may not ever change. If it's been 0.1 miles, it will change every few seconds.

pretty darn good mpg for a truck
Well, I never had a vehicle with an mpg monitor/readout. The good news is after the reset I tried to not baby it so much and also had the display set so I couldnt see the mpg for a few days. Checked it when I got home from working just now and it was at 20.1 Thats pretty darn consistant, 20mpg average no matter how I drive.
As a side note I had to merge from a 45mph road to a 65mph road today and the power available with the 3.7 was outstanding. Also had the A/C on today and yesterday and that doesnt seem to affect the mpg.

I reset mine at every fillup along with my trip odometer

Hitting the right arrow when on the screen with the big green bar gives a historical perspective of your driving in relationship to your average since reset. Depending on the settings, each green bar displays the average of the last 5 minutes or another number of your choice or the average of the last 5 resets.
I.E.
5 minutes each bar = 1 minute
10 minutes each bar = 2 minutes
30 minutes each bar = 6 minutes
Last 5 resets each bar is the average before it was reset.
