Lets say I am maxed with above mentioned family and pups. Add another 600 lbs of camping gear. Is there ever a situation where I could be weighed by the authorities and be fined? Situation seems to be a bit reaching.

I havent even added my future trailer to the equation.

Just called Snugtop and they said my top should be 200-220 Lbs

I guess I need to load everyone up and go find a scale.

Nope. They don't scale private individuals. Or f150s.

Load it up and have a good time.

I don't think you have to worry about being weighed but if your ever in an accident and the truck is over weight they could use it against you. I wouldn't worry about it now but if your at the limit and then put a trailer behind the truck you'll be way over.

That is one LOW GVWR for an F-150, probably the lowest I've seen. Yes, it's hard to believe that your family, dogs, and the topper are maxing you out.....but if you ARE thinking about adding a travel trailer, please consider a heavier duty 1/2 ton or some serious modifications to your current one.
The tongue weight on our TT is nearly 1,000 pounds, and our GVWR is 1831 (SCAB Max Tow EB), so it tows very well.....but this is a good warning for all of us when looking at a prospective truck to check that sticker in the door!
I do think that the door GVWR does not take into account a 150 pound driver and a full tank of gas, so there is 150 pounds for you that you might have been adding in and do not need to....not much, I know.

I did read somewhere that the fuel isnt considered against that number. I have a 36 gal tank 36x6 = 216 lbs. That would really stink.

Dad = 240
Mom* = 130 (Actual weight is masked into sons weights..)
Son 1 = 120
Son 2 = 90
Son 3 = 70
Son 4 = 60
Pup 1 = 100
Pup 2 = 130
Snugtop 220
Bedline 50
--------------
Total = 1210 lbs

Whew Im under the 1233. What can I carry for 23 lbs? LOL

this is bad advice dude. In this case with OP's cargo/people, you are right he probably won't have an issue with authorities. However to blanket say you can load up and they can't bother you is total BS (at least where I come from).

If i have a trailer and i am towing, (or just hauling for that matter), and i am squatting to where it is visible that i am overloaded, i can be pulled over. It's not safe, end of story. I would almost expect to be pulled over.

With all the mountain ranges in British Columbia, they take this pretty seriously and you can be forced to leave your trailer or adjust your load till your weights line up.
