Hell, I'm suprized you got 11mpg with that load and flats! I've got the same rig, 2012 Teryx4 limited and I have towed it with my 11, Eco and my 13, 5.0. (Set up the same way, gears and tires) The windshield of the t rex creates so much drag it's crazy. On two long trips I got 10.5 with the Eco and 10 with the 5.0.

Yea, you need to try it again with some air in the tires. I know WV has a lot more ups and downs then Missouri but I've never had an issue towing that light of a load. I have a 12' V-nose that I haul crap around in. Probably 2500# loads at most. I get around 14 or so but if the wind isn't in my favor it will fall like a rock.
I tow round bales with a Big Tex trailer. Trailer is around 2300# and each bale is 1200-1300# if nice and dry. I'm at about 7100# to 7500#. Not exactly sure what I get but I know the mileage is steady, even in the small rolling hills of Central and Western Missouri. I decided to snap a pic after I got back, wish I had thought of resetting it first. I'm thinking 12 mpg.
After I dropped off the hay I was in Boonville (the wife and her penny slots) when we got the call that my daughters boyfriend had a battle between his leg and a chainsaw so we had to make a trip to Kansas City. This is I-70 going 73 mph for about an hour and a half. At least I remembered to reset it.
