EcoBoost or Standard V8?
Currently debating on if I want to step into the modern day an age and upgrade to an eco boost. A little background : I'm in the military, live in OK and own a small ranch, only need to haul a couple horses here and there.
I just don't know too much about the Eco boost, I'd like a 11'-13' model

Good luck, you just started the greatest debate on these here forums. I would suggest a search.
Both are fine. Both will pull about the same with a slight edge in favor of the eco. Both have about equal longevity and reliability 98% to 97% (contrary to what others claim) with a slight edge in the v8 but they have their issues too.
Biggest tell of how they will be is the previous maintenance. The one with better records would be the better buy.
Final gear ratio will make the biggest difference for towing so look for 3.55 or 3.73.
Honestly, go drive both and see which one you like better or whichever is within your search area with the options you want.

I’ve had both the eco boost and 5.0
i loved my ecoboost they pull very hard and if tuned are very powerful trucks. I currently have a 2014 5.0 .
after driving the 5.0 I don’t miss the ecoboost. My 5.0 on a 6 inch lift and 325/60/20 nittos gets the same mileage as my ecoboost that was leveled. And 0-100 pulls my 5.0 usually catches most ecos there quick from a dig but bottom out after around 50 or 60

If you'd said new truck, let the debate rage on. But since you said 11-13, it's a no brainer. Coyote V8 all the way. Especially since you live in a rural area and I assume the repair shops are a long drive away.

The V8 will be cheaper to service and repair and more shops will know how to work on it when things break.
The Ecoboost will have more torque and fuel economy but also requires premium fuel when towing to avoid issues such as excessively retarded timing causing overheating when pulling loads up steep grades.
