3.5L EcoBoost gas mileage
I’m averaging 15.0 mpg under normal driving conditions in SC. Don’t tow/haul anything but groceries! 58,000 miles, K&N replacement filter is the only upgrade. What gives?

You bought a truck. That is pretty normal.
But here are some things that can help
First get rid of the K&N filter, unless you oil them perfectly each and every time they let a lot of dirt and stuff in. The paper motorcraft or wix filters are cheap and do a better job. They just get clogged so you have to replace them instead of cleaning them.
Second you can try cleaning the 3 MAF sensors and throttle body and doing a KAM reset.

100K on mine and I average 16 lifetime with a lot of towing and highway miles. I'm good with it, especially with the flawless performance so far.

I figure I might be paying the price a bit in mpg loss for carrying the extra weight of the front drive train, but am not too disappointed. I've also added a bed cover and a heavy rubber bed mat to protect my mountain bike which both added even more weight.
I mix up a lot of highway and city driving and average around 16.9 to 17.1 or so on any given week. On long interstate trips, I have gotten close to 18 depending whether I am going up or down in elevation. Always better heading to the beach than it is returning for this reason.
I also run a K&N drop in filter and after running one for 14 years in my old 2001 Lariat, I have never had a problem with them. Proper cleaning and oiling is key. I did notice a slight uptick in mpg this past six months after putting new plugs in. 56K on mine.
