Are you sure about those rpms? That sounds quite low for 70 mph. I have 3.31 and I would swear it is closer to 2000 rpms at 70 mph, though I could be having a brain fart.

I have 3.73s ELD with the 5.0 4x4 Screw with factory 18" rims. I have no problem getting 19-21mpg mixed. Hwy speeds of 70 tach about 2000rpm.
Realize that it can be very expensive to regear a 4x4 (2 axles). So go with the bigger gear now. Plus it might benefit you in the long run if you decide to put bigger tires on later.

Well, since we need to qualify, I have a 4x4 eco scab with 3.31s. I have towed about a max of ~5000lbs so far and it doesn't even know it is back there. No issues at all Mountains or heavier weight (or larger tires) are the only reason to go 3.55 or 3.73. The eco has plenty of low end grunt even with the 3.31s to pull whatever you need.
I have yet to try it in the mountains. And may not for quite a long time.
