We use the BFG KO2s and the Cooper STT Pros on our oilfield trucks. Both perform great in the oilfield, which really tests a tire. Bot look good, too. But I might go with the BFG if I were you. I think it rides a little softer on road, which sounds like where most of your use will be.

Yea I know I can't go wrong with the BFGs. How is the treadwear on the Cooper STT pros? I'm sure those compared to the BFGs are very different

Do yourself a favor and walk away from the federals. Had some 37s on my truck when i bought it. They lasted about 7 months. Now have 315 70 17 bfg ko2s. Much better ride.....of course.
