Nice looking truck.
Tires start rubbing when you add offset.
With your wheels having +1 offset that means that you have 43mm (1.692") more offset (setting your rim farther out from the hub)
Tires cause rubbing to but people just forget to consider offset.
Just as a reference I have 275x65r20 (34.2x11.1r20) with a 2" Daystar Leveling kit (only actually netted 1" of lift) and factory rims.
I clear them easily with 1.25" of clearance to the rear crash bar at full lock.

These tires are damn close in size to the 275x65r20 (34.2x11.1r20) you're running. Plus I'm expecting a full 2" level up front vs your 1"
Where you see 1.25" crash bar clearance at full lock, I'm hoping the 35's will clear too. Its a difference of .670" on the OD and .440" on width. Based off of my calculations they might clear, especially if consider the differences as radial dimensions.

I'm leaning towards the LT's because of the extra weight/ply etc on the 35's at the moment.
I have about .750 clearance between the back of my tire and the UCA with my stock set up now.

If you look at the bottom of my drawing the tire size difference doesn't change much but the offset really moved the tire
35" by 11.5" will clear stock easily and on +18 it'll just clear without trimming.
To get a 0mm offset you will probably need to remove the front crash bar and trim the mud flap and rear crash bar.
I'm adding coilover set at 2.5" true lift (my 2" levelling kit only netted 1" of true lift) and Moto Metal Mo970's in a 0mm offset with either of the bellow.
I was looking at the 295x60r20 Ridge Grapplers cause they measure 33.94 by 11.77
Or the 295x60r20 Trail Grapplers at 34.45 by 12.13

In my opinion they ride smoother and are more quiet than Terra G2's and definitely when compared to Trails. I have had a chance to drive in the rain since the original post, and they do great, no complaints. 11.5" wide looks good, I didn't want an overly wide tire that sticks out several inches, so the 0 offset and 11.5 seem to be a good combo.

I don't have the Ridge Grappler or 35s, but I had the Exo Grappler in 295/55r20 installed yesterday. These are 33" by 12.2" or so. The wheels are Moto Metal 970 20x9 with the 18 offset. They just barely crest the wheel well. But I do have the sport package with the factory fender flares.
