What thickness of plastic are you using to Mount your speakers in the doors?

3/8 or 1/2 unless you need more for clearance

As someone else mentioned, you can use MDF as long as you paint it with something to protect it from moisture. I use a spray can of bedliner when I do door spacers and it works great, and its way cheaper then the pre-made rings, since I always have scrap MDF laying around from other projects.

I bought plastic cutting boards at Walmart. About 1/2" thick. Cheap and easy to work with.

Yes exactly. White plastic cutting board. They were $2-$3 and bought one for each speaker.
