Two 10's,800 watts would require how strong of an amp?

1600watts? or would be more like 1000w or 1200w

What two 10s? Need to know at least how many voice coils, the impedance (in ohms) of the voice coils, and the RMS power handling of the subs.

RMS handling is 400 W RMS / sub, you'll probably want to bridge them for a 2 ohm load on the amp. Look for a class D mono capable of 800-1000 W RMS at 2 ohms.

how do you wire the sub for 2 ohm versus 4 ohm.

On a mono load with two 4 ohm SVC subs, you can only get 2 or 8 ohm load. You'll pay a lot more to get the power at 8 ohms, so here's how to do it as 2 ohm:
