If it's hard to find a shop that does it right the first time, I would strongly suggest that you find a small (non-franchise type) family owned/operated tire store. Talk with them about what it is you need. And you should be just fine. Remember a couple of things, these small shops can't offer you the same pricing as the chains. But they do offer good and honest customer service. Lastly, with anything, mistakes happen.

But be sure to find a shop that can accommodate bigger tires. There are a couple down here that can balance my tires due to their size.
