You would think that Ford would allow the max speed to be overridden to help ensure that Darwin's Law can be maximized, wouldn't you?

Unless you are at the track then that max speed is more than enough for any given situation on legal roadways.
However if you are at the track, most programmers will allow changing of those parameters.

A tuner would do it. Your tires might not be speed rated to it, your engine may not enjoy it, you may screw something up. But the easiest and best way is simply to overwrite the limiter built into the ECU, and the way to do that is to flash it.

A programmer is about the only way that you can exceed 100 mph and with it you will see plenty of other benefits.
The F150 is limited to 100 mph based on towing and not the vehicle itself as the vehicle itself will easily and safely exceed 100 mph. Simply put, Ford does not want you towing anything above 100 mph. I know that sounds funny but according to Ford it is legal and safe to tow 9200 lbs at 100 mph (nothing in the owners manual says that I cannot, nothing on the door sticker says that I cannot).
Its not about common sense or your opinion, its about law and yeah, legally, I can do that.
And by the way, it is not legal to disable the speed limiter (safety feature).
