I have a 2012 F150 Lariat Supercrew. How much would I have to lift it in order to fit 35"x12.5" r20 wheels without rubbing?

Depends on if it's a 4WD and what wheels are you gonna run with the 35's..

It is a 4wd and fuel 1 piece wheels vapor d560

4" will work fine, I run 35's with a 4" lift and 2wd so I'm 2" lower than a 4wd with the same lift and I'm also running -12 offset wheels, I did have to trim a little plastic off the lower bumper area to stop rubbing. You shouldn't have to trim anything with your wheel offset.

How well would this work with some light-ish offroading? (assuming the tires are suitable for offroad)

As well as any other lifted truck, your best judgement will be the deciding factor.
