My mpg experience
I have a 2011 FX4, EB, Screw, 3.73 with 8000 miles. I got 21 mpg on the 150 mile trip home from the dealer the day I bought it new. I currently get 21.4 mpg at 65mph and 19 mpg at 75 mph on the highway. I'm getting 17.6 around town. I'm retired and live in a small city so my in town driving consists of very short drives of less than 5 miles most of the time. On short drives the truck never has time to warm up so it uses more gas. My nephew lives in Texas and also has a 2011 EB but with 3.55 gears and he gets better mileage than I do. I have read a lot of posts where other EB owners are getting just as good mpg as mine and some are getting better. I have no idea why some get good mpg and some get bad mpg.
The one thing I do about once a month for fun is take it out on a deserted country road and flat foot it through the gears from a dead stop several times. We use to call it "blowing out the cobs". It always seems to have more power with less pedal input after I do that.

Spend the money on a SCT tuner, or comparable. It's only an extra couple hundred bucks on top of your 40k truck, and it will help immensely. And spend the money for performance tuning. And not from Joe the grease monkey but from a performance shop with an in-house dyno. In the end, anywhere from 400 for the tuner to 4-6k for custom fuel mapping, shift points, etc., besides several other options that may not increase power but will increase efficiency or reduce weight/vibration/friction or other power thief.
