Disconnect the MAF sensor and see if it starts like it should.

Easy to say when you’re not fully aware of the situation. I don’t know either party, so I don’t have a horse in this race, but there could be a myriad of reasons to not react hasty. Maybe there’s limited shops in the area, maybe it’s a really convenient location for the OP, maybe the shop is really known for quality, or affordable work. Maybe this is a rare situation and has extenuating circumstances, like a staff shortage, or sudden work overload. Could be a number of things. And in reality, it’s not terribly uncommon for a busy, independent shop to get backed up due to parts not being delivered as expected or available, or multiple hidden issues after the initial issue is resolved. It DOES happen. Only the OP knows all the details of the situation, and for us to jump to a hasty conclusion, is... well, kinda’ premature.

On the other hand trying to see it from a different angle, maybe there simply isn't anything wrong with the truck. The description of the 'problem' sounds quite minor and might just be the way the computer is programmed. I bought a brand new 2014 Mustang GT that always cranked over about 8 revolutions before starting. Every single time, from the day I bought it. Cranked about twice as long as any other vehicle I own and there wasn't a thing wrong with it.
Shop owner may have just been unable to tell the customer that he was wrong.

I bought the truck brand new. It’s never cranked like this before. So to me, it’s concerning. If we want to play dealership, sure, it’s normal.

OPer whats next? A different shop, dealership, etc.
Someone mentioned a shop might have extenuating circumstances which is understandable....that is if its a one time exception to the rule.
The shop i mentioned earlier has since been dumped with extreme prejudice..
Just about every time i brought a vehicle in for work there, they kept it for days on end before they even started to work on it.
In one case they kept it for two weeks for what i would call a relatively simple repair job.
And i had to make an appointment there in a week's advance.
Every time i drove by that shop, yep my vehicle was still sitting in the lot where i left it.
If i didn't hound them in person a couple times that vehicle would still be sitting in their lot waiting to be worked on.
