Well, the wires are there for a reason, so a good first step is to have those wires repaired so the harness is complete. Every wire and harness has a purpose, so you’ll want them repaired even if that is unrelated to your AC problem.

That'll do it. That's the high pressure sensor.

Snipped? Looks more sawn apart. Where is the other end of the harness? I'd be hunting for the last jackwad that had the hood open.
At any rate, there is your likely reason for the AC not working, but that wouldn't cause a "random" problem, it's pretty sure bet there's nothing "random" about it.

*cough*mice*cough*

you have a 3 year old truck with 12,000 miles...meaning it's barely driven.

That could account for the ragged cut. And until the harness separated completely, could cause a random thing. If the other end of the harness is there, he could just splice it back temporarily.
Good catch!

Probably, we had an old work truck that sat next to a field. Warranty was denied because something got up in and chewed away.

Looking at the engine bay you can tell the truck has been sitting, probably in or next to a field. I'd be doing a lot more inspecting as they are probably not the only wires that have been chewed on.

I'd say the guys here are spot on with your chewing problem. It's either that or flat out vandalism.

Do you live in an area with a high population of squirrels? I repaired a few harnesses that a squirrel chewed through in a single night. If it's not squirrels I would guess mice, looking at one of the pictures there seems to be tell tale signs right next to the battery on the lower right hand side of rodent activity. I would do a really close inspection of all your wiring harnesses. EDIT: so looking closer at the last picture you can see a bunch of what looks like claw marks on the rubber tubing, I am certain this was a rodent.
