Default Gauges read wrong

Hope everyone had a happy Halloween!! Have had a strange occurrence going on with my dash gauges, I cannot make any sense of it. This is what happens:

1. Temp gauge is very sluggish and never goes past the N or O with the truck running .

2. When the ignition in ACC / RUN and after its been run for a while and then shut off, the seatbelt warning light/buzzer has to come on, then gauge will read warmer ( more realistic temp) up towards the M or R.

3. The fuel gauge only moves from dead to E no matter what.

4. The oil and alt gauge seem to be reading fine.

5. After buying the truck I had replaced the temp sensor and the oil pressure sensor and taped of the exposed wires leading to each. The oil sensor was incorrect and the temp sensor was the original.

Before I start to chop wires and pull the dash apart, is there anything I could not be seeing or overlooking?

Thanks much in advance for your time and efforts.
