I am in need of changing my flex plate because it looks like the starter has shaved down the front of some teeth. How easy is it to replace the flex plate myself? I know you have to take down the Transmission to get to it. Also it looks like the flex plate has been hitting my starter and shaved it down too.

Yep. This is certainly an issue. If I didn't know any better, I'd say someone left out the spacer plate between the transmission and the engine, except for the fact that I can see it right there in the picture.
Has the flex plate been replaced before? Maybe they used the wrong part? IIRC there are also different starters depending on if it's manual or automatic.
As far as the difficulty, it will be pretty difficult. Like you said, you'll have to pull the transmission. This is most of the work. Removing the flex plate isn't too bad provided you have a cheater bar. The bolts holding on the flex plate are torqued to 85 lbs and also likely have some type of thread locker on them. I usually stick a screwdriver into a hole on the flex plate which wedges up against the engine block to keep from turning the engine.
