It literally took me 30 minutes tops to remove and re-install. Very easy to do!

Does the 8" screen have the Fuel Economy graph on it like the 4" does?
The one that tells you what the fuel economy is for the last 30 minutes?
For some reason my wife loves that graph and keeps it on it all the time.

No, nobody makes anything that looks like the stock ones and I've struck out with every graphic shop I've tried to commission into making some.

Same thing, haven't found any that have the stem that's long enough to work in the 8" cluster.

Red needles won't work unless you also replace the LEDs on the cluster circuit board, as the original LEDs are blue and the colors pretty much cancel each other out.
If you're willing to take it apart and get the LEDs replaced, all you have to do is scrape the paint off the back of the needles and re-paint them red.
