Overheating/Heat soaking?

Only ever done this in hot conditions and the manual says "It is acceptable in hot conditions or in stop and go traffic, for the gauge to be all the way at the end of the normal range, it it goes into the hot range, your truck may be overheating. Pull over and shut your truck off.

But now the original problem remains. I changed out spark plugs again (Dd it 2 weeks ago but broke 2) and put autolite ones in. Truck is cutting out in third gear. and then resuming power, then it stalls when taken out of gear to come to a stop, only when the truck is hot or at operating temp. Should a i make a new post about this?
Its a carbed engine.
