When I was installing my rear blocks the other day, I was moving my wheels to check out the differential. I have an open diff and I can move one wheel a good two or three inches before the other one even budges. is this an issue with the diff/axles?

I think you are OK. If there was no clunking or grabbing I would not worry about it. Based on gear ratio and tire diameter a few inches of tire movement movement is normal.
