Engine Coolant Overtemperature-New 2016 F150 Won't start

I have a 2017 F150 XLT 2.7 ecoboost with 15,000 miles. Yesterday morning my truck did exactly what has happened to the other posters. Truck would not start even with a strong battery and what sounds like a strong effort by the starter.
-Coolant temp high (outside temp was 45 F)
- exceeded start attempts error msg. (cleared this by lifting battery terminals, supposed to wait a few min but mine did not clear after 12 hours)
- checked for rodent damage and did not see anything
-checked the "FordPass App" for diagnostics and it states my vehicle is 100% healthy.
-figured if it's a sensor they will notice as soon as they connect to the vehical...well
I am not going to get into the details of the lacking effort by my dealership to provide a loaner vehicle. however, this issue has not been figured out yet by the local ford dealership. thankfully I have ESP ford plan so should not have to pay more than the deducible.

A rodent had chewed the wires that lead to my fuel rail. My truck was not getting pressure on the fuel injectors. The electrical wires are made with a soy base which is attractive to rodents.
Unfortunately, the dealership that had given me so much grief on providing a rental car during the repair installed the new fuel rail wrong. A week later i was driving and had my truck shut down only to find gallons of fuel leaking out of my injectors into my engine compartment. This time i brought the truck to a different dealer and just got my own rental since i did not want to deal with the hassle of telling the dealership i paid 3K for the ESP plan which apparently means nothing. I had to literally highlight the rental car section of my plan to even get the rental the first time. Also rodent damage is not covered but that is at least in the small print.

We have a 2016 F150, 3 months old, with 6100 Kms on it. Engine is 2.7 EcoBoost, V6. Yesterday morning the truck would not start. The message displayed was "Engine Coolant Overtemperature". This was first thing in the morning in a temperature below freezing and the truck had been parked all night. The temperature indicator on the coolant icon is to the far left - ie. coldest. The coolant is at the proper level, neither low nor high. It's the coolant that existed in the truck when we bought it. We plugged in the block heater for an hour. After that I was able to start the truck 3 times and each time the "Overtemperature" message displayed. In between those 3 times it started, there were many attempts where it did not start. It cranks but doesn't turn over. We have an appointment with the dealer Tuesday and will probably have to get Ford Roadside Assistance to tow it to the dealer. It is very disheartening to have an almost new vehicle that doesn't start.
How can the system think the coolant is "overtemperature" on a truck that hasn't been driven for 12 hours in weather that is below freezing? We are in the Toronto Canada area,and there a lots of 150's driving around here. There is nothing that would make it overtemperature in those circumstances.
