Default New (used) truck, did a bunch of maintenance

Hi all, new to the forum! I've been lurking around a bit & figured it was time to post.

A little over a week ago I picked up a 2007 screw 5.4 with just under 60k on the clock. Since it's used I wanted to go over the truck top to bottom so I know it was done. I've done a lot of auto maintenance in the past, but it's been a while, so I wanted to get some feedback.

Last weekend:
Oil Change - used Mobil1 Full Synth (AutoZone had a special).
7 quarts (if I remember correctly) & filter
Bled Brakes - siphoned out reservoir, topped off with DOT3, bled, topped off again

This weekend:
Front & rear diff fluid change - Royal Purple 75/140 in rear, 75/90 in front
- Book calls for 80/90 for front, but couldn't find any of that in full synth. Rear took 3 quarts & front took just shy of 2 quarts.

Coolant flush/fill - Ford gold stuff + distilled water
-Drained from spigot on radiator & pulled block drain as well. Re-filled with regular water & drained a few times to get as much out as I could. Re-fill only took 2 gallons (one gallon coolant & one gallon of water). This seemed pretty low to me, going to watch over the next few days & top off as necessary but should there be anything to worry about here (I don't want to vapor-lock or anything...heater hoses both feel warm & temp gauge is right in the middle, so it seems like it's flowing)?

Transfer case drain/fill
-Used Ford transfer case fluid. The guy behind the parts desk (& one of the techs) at the Ford shop said not to use MerconV & the Ford Transfer Case fluid is basically the new name for the old Mercon label & that is what they use in customer vehicles. Took just shy of 2 quarts. Shifts from 2WD to 4hi & low just fine.

The truck was level for the diff/xfer case fluid changes. Do any of the above measurements look really out of whack? I just wanted to make sure I've got enough juice in all the right spots.

Thanks everyone!
