What is the advantage of having 20" rim vs 18"?
Does the 20" give better handling or it's purely for the look... I've heard from somewhere that 18" is better for off road but that is not something I do often. If 20" give a more responsive handling then I might upgrade otherwise I might not.

Tiny bit better handling but only a professional race car driver will notice .

Try 17" to 20". LOL Sidewall is the main difference between them. On the 20" tires, there is not a lot of sidewall, so you get a stiff ride, but better handling. You also sacrifice load carrying capacity, there are not a lot of LT type tires in the 20" range.
The 18" tires have quite a bit more sidewall, so you get a softer ride and can handle more weight.
The weight handling is critical if going over rough roads with a heavy load since a hard strike can damage the rim on the 20, where on the 18 the sidewall can deflect it. There are also more choices for higher weight rated tires. Downside is the higher sidewall also deflects more while cornering, so the handling suffers.

I switched the 18" rims my 13STX came with for a set of 20" sports off a 2016. Huge difference in handling. I mean it actually corners now instead of leaning. The stock 18" Michelin's were $800 to replace, vs $520 to replace the 20" Hankook ATM's the new wheels came with. Huge improvement in handling, slightly worse ride, and much lower replacement tire costs gives the win to the 20's. They look better too.
On Edit, my 18" tires were 30" tall, the 20" tires are 32" tall, so the same sidewall height for the tires.

Off road performance the smaller rim with taller tires will generally work better.
Street performance the larger rim with tires that are not as tall will handle better.
I do believe when it comes to towing that you can easily get the same rated tire with any size rim. Still plenty of tires to choose from in all sizes and load ranges.
Unless you're trying to fit a specific use it really comes down to what you like best.
