The 5100's are too short for that much lift when fully extended and you will have less suspension travel and added strain on the Bilsteins. They will bottom out and take the brunt of the pressure when your wheels and axle tries to fully extend.

So why does Superlift 6" (Bilstein 5100 Rear Shocks) Lift Kit utilize these shocks with the same amount of rear lift?

You might want to check if they used 5100's from a different vehicle make/model, to see if it has enough travel. You can compare the Bilstein part number to the one listed above. But they would then also be tuned/designed for a different vehicle.

The Bilsteins designed for your truck are only rated for up to a 1" lift:

No worthwhile opinions on the lift parts but there are no lock washers evident, and if those are self-locking nuts they didn't get past the crimped part, the part that actually locks. With the length of the u-bolts and natural stretch of the metal those nuts could easily unscrew. I'd guess they loaded them with thread locker but who knows.
You should make sure the shop manager knows. Kind of looks like they had a rookie install the kit. Lots of wrong there, lots of liability.
Edit - actually I think that I see one lock washer. Even worse...
