Nitto ridge grappler size

I didn't want to do any cutting and asked a shop guy what size tire he recommended for a 4" lift. He told me that 295/60/20 would be perfect and that 35's would rub if i didn't do some trimming. I have read that many people are doing 35's with a 2 or 3" level, and it looks really good, but most if not all of them had to do some cutting of the crash bars, etc.

Since I had the dealer install the wheels/tires, I do not know the offset. But the tires do stick out about 1.5 inches. I bought some Bushwacker Extend-A-Fender flares and am having them painted to match the truck. Once they're installed then that should stop most of the dirt, etc. being sprayed onto the side of the truck from the tires.

I have a 2015 platinum 6.5 bed that I am looking at getting some ridge grapplers for. Would it be better to get the 295/60/20 or 35/11.5/20. I think the truck has either a 1.5" or 2" spacer on it. I am planing on getting some 20x9 +1 fuel Mavericks also. The 295s are shorter but heavier. The 35 is 1" taller but 3lbs lighter. Would I see any performance or mpg difference between the 2?
Thanks

Not my best pic, but my truck has a 1.5 inch level up front, and I'm also running the 35x11.5x20 Ridge Grapplers.
Had this setup for over 6k miles so far and absolutely love it!
I do a lot of highway driving, cruise set anywhere from 65-75, and my computer is telling me I average 17.8 mpg which is extremely close to my hand calculations.
Up north if I drive with the cruise set to 60 I can easily get low 19's assuming it's not stupidly windy and I'm not hauling anything.
In the pic below I hauled my track bike and a back seat full of tools and gear 2 hrs away, cruise set to 75 most of the way and still got 16.2 mpg.

No Lift or level
Has anyone used the Ridge Grapplers, 295-60-20 without a lift or level on factory FX4 20s and if so how much rubbing or trimming? Reason being I have already purchased these and thought about running them temporarily until I get my Bilstein 5100s installed, hopefully next week.
