Need help picking tires for leveled 5.0 3.31 gears

I have a 16 5.0 with 3.31's. Currently I have stock 20's with 275/55/20. I am thinking about going with a 17" wheel and the 285/70/17 with Nitto Ridge Grapplers. They are a 6 ply and only weigh in around 52lbs per tire. Im thinking by reducing the wheel weight a bit going down in size will just about make up for the 10lb increase in tire weight from stock, while still giving an aggressive look.

My last trk was a 2012 EB w/331 rear end . I put 275/65/20 KO2's and it fell pretty sluggish so of course I then put a SCT tuner on it.

I won't be doing that on my new 2016 5.0. I think I'll go pretty conservative with either Bilstein 5100's( if they ever come out) or a 2" block and run 275/60/20 KO2's and not worry about rubbing.

So Bilsteins can be used to just level the truck correct? I spoke with a rep from autoanything last week and he tried to tell me they are only to be used with a truck that has a suspension lift already installed and wont work to just level the truck. I told him I believed was wrong but he swore to this.
