Well, you tried. I wanted to see if anyone has used saddle oil before, or if it left the seats too oily until it soaked in.

Any good moisturizer will leave the seats oily for a bit. Most take 30 minutes to a couple of hours to dry in. If they are instantly dry then they aren't departing any real moisture to your seats.
Saddle soap is a great cleaner and as good as anything more expensive. I have seen products used that can cost upwards of $100 and they positively will not clean any better. Use good old saddle soap.
I have found that from all across the price range that Lexol and Mcgquire's leather conditioner seem to work the best. Both take a bit to soak in and this is exactly what you want. This means there is actually something in them and they are soaking in and will protect your leather for more than a few days.

I just purchased a King Ranch and was anxious to condition the seats. I bought Chemical Guys leather care product. I must say that I'm pretty happy with it but time will tell. They make a lot of other products that I will be buying in the near future.

Yep, same thing I use. Lexol conditioner. I have used the cleaner and find saddle soap works a lot better for the deep in stuff. The conditioner, though, is the one I use. Not too pricey ($10/bottle at autozone) and does the job as good as the $60-100/bottle stuff will ever do.
When I had my Katzkin leather installed this is what the dealer recommended

Does the Lexol leave a glossy finish? The Blue Magic cleaner and conditioner leaves the leather glossy for about a day, but the seats begin to look full after a week with or without driving it. I guess I have unrealistic expectations, but the saddle oil leaves my boots shining for weeks with wear.
