Help with purchase 2.7 ecoboost vs v8?

I wouldn't worry about the 2.7 being new. The 3.5 EB was new at some point as well and it's just fine. Turbos are not a new thing, they've been around forever. Transport trucks and other big diesels have been using turbos in them for decades and they run just fine as well, and they can have stupid high mileage.
Like others have mentioned, it all depends on what you do and how often, but don't be scared of the 2.7 just because it's new. I have 33k on mine and it still drives like it's brand new.

We we were not avoiding the 3.5 engines we just could not find any in our area at the dealers we were looking at in the extended cabs. My husband needs the extended cab in order to have bed space. We had only found a 2.7 sport 4x4 in white with the 3.31 or a 5.0 silver xlt with 3.73

The "tough guys" may be people that enjoy the simplicity of a naturally aspirated engine and the classic V8 grunt. I don't think I've seen anyone implying you're less of a man for buying a twin turbo V6 with perfectly good stats.

For towing make sure you get the 5.0 with 3.55 or 3.73 gears and for the 2.7 like I said before I would get max payload/tow package with the 3.73 gears. The main thing is to make sure you have the payload to haul the work trailers your husband needs to. You can do that buy finding out what the payload sticker inside the drivers door lists on it... the yellow sticker.
A lot of people don't think to do this and find out the hard way they don't have enough truck for the job. Heck my max payload of 1777lbs is more than 3/4 of the 5.0 and 3.5L's I looked at and the dealer is selling them.
One last thing is talk to a sales person tell him/her what you need and they can search extended inventory (other dealers) and pull the truck into their dealership. If you do this I would pick a dealer giving me a good deal with known good service.
