i like the size of the BFG 285/65/20 just because it is a bit beefier and fills wheel wells a bit more. Any idea if 285/65/20 and the Fuel Vapors +20 would work? I have found a couple pics online of this potential setup but the same picture on different websites says different tire sizes. (One says 285 and one says 275..:so not sure what the real tire size is on the truck in the picture)

You could look at custom offsets - as you can search on tires size and comments will tell you what was done and if any rubbing.
