The shifting could also be related to the speedo being off? A smaller tire will read faster MPH so maybe that's why it won't shift?
Are there are C rated LT tires in the sizes you're looking for? at 285/70/17, BFG KO2 made a C rated and E. The weight difference was approximately 5 lbs. I didn't notice any different in my MPG going from OE Goodyear wranglers 275/65/18 to the KO2s... but then again, i went with lighter wheels

Not sure if you are set on the KO2s, but for me I really wanted a P/SL tire since I don't tow much and wanted to keep a nice ride and similar MPG to stock. If it were me I would look at Toyo AT/II, Nitto Terra Grap G2s, or Cooper Discoverer AT3 all come in a similar SL 275/65/18 and weigh under 45lbs or so.

BEAUTIFUL!!!!! This is my favorite truck I've seen on the forum!! I'm a SCAB junkie, especially with that grill. And I'm not a fan of over done trucks,I like it simple and clean and this is absolutely perfect! I've got the same truck in white (stock).
These tires are next for me too, and you have me now seriously considering leveling kit. How was you MPG hit with the setup?

I only had 121 miles on the original 275/65/18s......So i can't really say.
I also added 1.25 " spacers to fill the wheel wells...
